Recipe: Cashew Chicken Stir Fry

1 1/4 lbs boneless, skinless chicken breasts
1 bag of brown rice or quinoa
1 large head of broccoli
2 cloves garlic
1 tbsp ginger
1 bunch of green onions
3 red bell peppers
2tbsp honey
1/4 cup soy sauce, reduced-sodium
1/4 tsp black pepper
2 tbsp cornstarch
1/4 kosher salt
1/4 tsp red pepper flakes
1 1/2 tbsp canola oil
3 tbsp rice vinegar
2/3 cup cashews, dry roasted unsalted
